Karen asked about the difference between tapioca flour and tapioca starch:

I bake a great deal for my Celiac son and have always considered that
tapioca flour meant tapioca starch.  On the other hand, there is a world of
difference between potato flour and potato starch.  I find that potato flour
is heavy and so I rarely use it whereas I wouldn't be caught without potato
starch in the house.
