A couple of days?  In my case, it took a couple of months...bordering
on a year.  The damage done to the intestinal lining due to the
presence of gluten can take more than a few days to heal.  It is
this damage that might be causing the malabsorption of dairy products
and other complex proteins and/or carbohydrates.  Give it a little more
time than a few days.
