I just heard about this, but have never tried it.  The owner of a restaurant
in Lafayette, IN told me that they never use bread crumbs anymore, instead
they dip the fish or chicken or whatever in buttermilk, then roll it in
instant potato flakes.  He says it makes everything tastier than any other
recipe they've tried.  It sounds like it might be a good alternative for
you.
