I was diagnosed 12 years ago (in Holland ) and then moved to the Uk
soon after and lived there for 6 years. I followed the diet faithfully
and improved greatly. Did not know however of the hidden gluten in
vinegar, HVP, flavorings, etc. And still had plenty of those. I was
beginning to wonder if I was allergic to something else as well... I
recently discovered the Gluten Free Gourmet Cookbook and read about all
the other hazards. At the same time I went to a rheumatologist for my
always extremely painful feet. He alerted me to the fact that it could
be an immunological reaction; i.e. celiac related. I immediately
started weeding out all the small stuff i.e. vinegar, mayonaise,
mustard, bouillon cubes, coca cola, vanilla, etc. An overnight
improvement! My feet are now virtually painfree and other symptoms
(which I wasn't paying too much attention to) disappeared too. All in
all, even though it is a drag going to a much more restricted diet, it
is certainly worth it healthwise. I have never felt so good as now!
