Karen,
I have wondered about this, since I was always told by (short) doctors
that I couldn't possible have CD because I was relatively tall.
However, it took me somewhere between 8-10 years post menarche to reach
my full adult height, a growth curve even more depressed than that for
the lowest 5th percentile of very high altitude natives in a Peruvian
community called Nunoa, with chronic malnutriion (which was the most
depressed growth curve I've run across).  I apparently had a small
growth spurt (1/2 to 3/4 inch) towards the end of this period, when I
was about 20-21 years old, that coincided with the beginnings of a
gluten-reduced diet.  Incidentally, I've also always been able to eat
like a horse, but like you I've noticed that I've had to watch it since
going on a more strict gf diet (though I'd attributed some of this to
increasing age, motherhood, and reduced exercise).
