It's got to be something wrong with your xanthan gum; I use the stuff
all the time and haven't noticed any taste at all, much less an unpleasant
one. My container of it has been kept on the spice rack for nearly three
years, so it doesn't go bad _that_ quickly. Perhaps there's some problem
with the humidity in the fridge--judging by how slimy the stuff gets just
on my fingertips, it must be very sensitive to moisture.
