A woman I correspond with modified Bette Hagman's Yellow Velvet Cake recipe
to be gluten, casein and soy free, as well as acceptable on the Feingold
diet for hyperactive children!  I made it last weekend and it was incredibly
moist. A double recipe made a two layer (9") cake and 24 cupcakes!  I frosted
it with a seven minute boiled icing, and the whole thing was a huge success.

Pineapple Velvet Cake
---------------------
Preheat oven to 350.  Grease and (rice) flour a 9 X 13" pan or 2 9" round pans.

Blend together:
  2 1/4 C gf flour mix
  3 tsp baking powder
  1 tsp baking soda
  1 tsp xanthan gum
  1 tsp salt

In a large bowl beat together:
  4 eggs
  1 2/3 C sugar
  1 Cup canola oil
  1 tsp gf vanilla

Add flour mixture, alternating with
  1 Cup pineapple juice

Beat well.  Add 2 tsp lemon juice if desired (I didn't).  Bake 25-30 minutes
for cake and approx. 15 minutes for cupcakes.
