Mike wrote about Passover being a celiacs dream

Be warned that matzah, matzah meah is straight gluten under rabbinic
 supervison.  However lots of other recipes are really great for coeliac diet.

Also I had a disaster with Beth Hillson's Matzah Ball recipe ( 3rd March) but
 if you fry it what wonderful pancakes or lokshen!
