In response to the corn problem, I've never had a reaction from corn.
Although I also can eat Buckwheat, perhaps some people are responsive to
more variations of the protiens.  Most of the research I have seen shows
that Buckwheat and Corn are Gluten free.  You are right about the
European response to Gluten, they allow a certain percentage to be called
gluten-free, in many cases this does cause poblems and last I knew they
were talking about changing that ruling. (I believe the percentage was
close to 10%, but am not sure.)
