Don Wiss wrote the following in response to a question regarding the
difference between gluten and lactose molecules:

I was wondering if anyone knows why it takes so long for the villi and
microvilli to grow back? Also, how much would one or two accidental doses
of gluten affect the villi and microvilli after they have recovered? Are
you back to square one?
