I posted this suggestion once before, but as we have a new crop  of
participants, I guess it is worth posting again.  What helps me most after
an accidental ingestion of gluten is taking a series of doses (read the
label) of maalox plus (with simethicone).  The simethicone really helps
reduce the gas and bloating I'd normally get from gluten, to make me MUCH
more comfortable.  Note: plain old regular maalox doesn't work this way, it
has to be the stuff with simethicone.  I'd guess that other products
containing simethicone would also help to some degree.
