Banana Tea Bread

Mix in bowl with electric beater:
    1 3/4 cup white rice flour
    2 tsp. baking powder
    1/4 tsp. baking soda
    1/2 tsp. salt
    1/3 cup margarine or butter (pre-soften in microwave)
    2/3 cup sugar
    2 eggs
    1 cup ripe, mashed bananas (2-3 whole bananas)

Grease a bread pan with margarine, then pour in batter.  Bake 350deg.
for 45 to 60 min.

This is a big hit with our kids (celiac or not).  The bread has a
wonderful texture, color, and remains moist for several days at room
temp.  This was an old family recipe that made the transition from
wheat to rice without modification!
