Just a comment about products that companies
may list as gluten-free... Don't just take their word.

Often, you will write to a company asking about
which of their products are gluten-free.  If you're
lucky, they will respond by sending you such a
list.  However, on trying some of these items, you
may have an unpleasant reaction, and wonder
what has happened.  The truth is, only you really
care to make absolutely sure a product is GF; the
company may not.

As an example, a couple of years ago, a certain
gum company claimed to several celiacs who
where calling with complaints that their gum
was entirely gluten-free.  However, it was later
discovered that the conveyor belt on which the
peices of gum were carried before they were
wrapped was coated with wheat flour.  So there
was indeed traces of wheat on the gum.

So beware!  Double-check with other celiacs before
trying something, or only try a small amount at first,
to be certain it is GF.
