Celiac List Folks:
Don Kasarda asked for instances of varietal variation in allergic
reaction. I think a very common one would be red wine being more
bothersome to many people than white wine {varietal, get it?}. The
histamine content of the skins and how they are processed eliminates this
instance from the "good example" category, however.
In my own case, I can eat pecans with no detrimental effects, but
walnuts, english walnuts, and black walnuts make me quite ill.
I thought this kind of allergic specificity was common and well known,
but then, I don't recall reading much on food allergies.
