I bought several gluten-free, SUGAR-FREE, Gefen brand cake mixes. First time I saw them. Sorry I didn't buy more.
I used the Sugar Free Coffee Cake Mix (makes one square pan or one cake layer).
But to the mix, I added chopped walnuts, a handful of fresh blueberries, and a couple of tablespoons of cinnamon (some in the cake and some sprinkled on top.)
OMG. This cake came out delicious.
If you're diabetic and want sugar free...it's made from sorbitol, but the "flour" ingredient is potato starch (alittle scary that sorbitol is listed first). Potato starch is high-glycemic, so even though it's sugar-free....it's not something to pig out on (no pun intended.)
Passover products are now on clearance...good time to buy...just watch expiration dates.
