Hello List Mates,
Seems like Xanthan Gum is in everything these days, especially our gluten-free foods. In the last couple of years I noticed a gluten-type reaction when I added it in my recipes. My (also) Celiac daughter noticed the same thing. Then my (non) Celiac son agreed. Is anyone else having this reaction? I used to use it with no problem. Maybe the process to produce it has changed. Please let me know. I'll summarize.
