If I may pipe in here. I don't think the problem is client-side. It could be, but probably is smtp server-side. What's happening here is a simple encoding problem. the ascii codes for the various symbols, such as apostrophe, are simply being put in. Google's smtp servers used to do this a while back, but not always, just for the ':' character.
Switching mail accounts while using the same mail client to write to the list would be the best test of that hypothesis.

I know Phil is running a Mac. I find it hard to believe that with all
the sophistication of the Mac and it's programs that there isn't a
setting in the mail program that will 'send messages using plain text
only.'. Every Windows/Unix/Linux program I have seen has such a
setting. Does anyone remember the old Pine mail program from the old
Unix Shell accounts at the beginning days of the Internet? Even that
dinosaur had such a setting. Someone must know of the proper setting
for this feature.
