  I'm sorry if these questions have been covered before (I haven't had luck
searching the archives.)
  Should celiacs avoid hydrogenated shortening? (My Mom saw this in "Still
Going Against the Grain" by Phyllis Potts)
  And can pectin be used instead of xanthan gum in making bread?
