The recipe I posted earlier for cheesecakes is very similar to the one I used years ago for cupcake cheesecakes.

I put a vanilla wafer (a couple of Midel animal crackers?) on the bottom of the paper liners in a muffin tin...or just omitted the cookie, and then poured the cheesecake batter about half way up each cup. It takes a little less time than a regular cheesecake, because they're so small.  Just bake until the tops are lightly brown and start to crack.

It's not blueberry season anymore, but frozen berries could work.  Stir berries in a saucepan with a little sugar until mushy, and then cool, to use as a topping.  Or I'd put a dollop of strawberry jam on top.

The cupcakes (without topping) freeze well, and are delicious slightly frozen.

Any gf cheesecake recipe should work.  

I'm almost sorry the cheesecake recipe appeared on my facebook page.  It's so hard to stick to a low-calorie diet with such delicious treats!
