Hello List Mates,
This week the BfR issued a very stern warning about their new studies revealing high arsenic levels in rice - specifically rice cakes. You can read the entire article here: http://bit.ly/1RS7FIL.
The article further states: "Parents are advised not to feed their babies or toddlers exclusively rice-based drinks or rice pudding".
Should we be concerned? Maybe. But at the very least, we should be aware. This is the 4th such study to be release in the past couple of years, so I think it deserves our attention. Especially as rice is the number one grain ingredient in the typical gluten-free diet.
The article sites maize, buckwheat and quinoa as possible alternatives.
Of course, for more protein, fiber and it's low glycemic qualities - I would highly suggest pure gluten-free oats and oat groats.
