I’m going to have to put my mother in a skilled nursing facility in a few months. She is Celiac (so am I and not getting any younger). The nursing facility that I’ve chosen have assured me that they can do the gluten-free diet, that they’ve had previous patient with the requirement, but well, people say a lot of things. Has anyone else faced this situation and can you give me tips/suggestions as to what to look for, who to see.
