Oh my goodness!  The response has been wonderful; thank you to everyone who took the time to respond. I have forwarded on a cross section of responses to the mom and dad. 
Many people suggested genetic testing, many suggested having the biopsies re screened at a specialized celiac center (I personally agree with both ideas), several suggested she remain gf if she feels better), and others suggested other blood work. 
What a great, caring group. Thank you!
