Peter,
Best to bypass Siri altogether. When you enter your messages app, once you've double tapped to enter the "to" or "text" field, just to the left of the spacebar is a "dictate" button: single tap to begin and double tap to end. Then after Siri says "thinking" your message will appear for you to proofread. Then just hit the send button.
The recognition is quite good.
