I was just at a family reunion at this hotel.  They were very knowledgeable
and accommodating.  Everything on the awesome buffet was labeled if it was
GF, and food was separated enough that there was little chance of cross
contamination.  If you wanted to eliminate all chance of contamination, or
had other issues, they were happy to make separate plates to order.  There
were lots of options, even some fresh baked goods, and everything was
great.
