Thanks to all who responded- what a great group!  I just downloaded my email
right after the dietician stopped by in response to my question about the
bread. Most of you suggested asking to see the package myself.   I wish I
had thought of that!  But she said that she was going to double check on it.
You are right, Udi's does have non-gf breads, too, and it could be confused.
Someone mentioned that the rye bread has a split top, not like the one I
described but another said that the rye bread does look like I described-
two contradictory descriptions.  A paleo version that looks like I described
was mentioned as being terrible.  This bread looked really good, too good to
be gf!  I'll let you all know when I hear from dietician.
