A friend send me an article written by Cleo Libonati, RN, BSN (I have a nutritional reference book written by this author), on potential copper deficiency in people with celiac. Really good information and I thought the list might benefit. I have frequent tiredness and have a diet limited by other food allergies beyond gluten, so this was very interesting. Copper seems like a minor thing, but it's actually quite vital to good health, and deficiency can really create havoc in our bodies in a number of ways.
