Went to my usual PF Changs for lunch today and tried the new menu. (Marlton, NJ)
I ordered the Beef a la Sichuan, and it was delicious. The waitress warned me that the beef is cooked three times, so it's somewhat crispy...which I actually loved.
The manager came over to my table to explain what corporate went through to find a way to make the beef dishes gf. And he said he actually locks up the regular soy sauce when his butchers are preparing the beef that is set aside to marinate for gluten-free dishes. to avoid any chance of someone grabbing regular soy sauce out of habit. He also said that 30% of his clientele is gluten-free! I think that's absolutely amazing. And that's with lots of competition around here, where we've got Pasta Pomodoro and a number of chains that have gf menus.
There are so many things on the gluten-free menu now, that my husband, who is not gf, and I order just from that one and we are able to share.
Also...They brought back the Dali Chicken, which I always loved. Beware...ask for plenty of water in advance! It's the hottest dish I've ever eaten.
It's such a pleasure not to be stuck with steamed vegetables and plain chicken or fish.
I wrote to corporate headquarters to thank them. I always do when there is something good to say.
