Super easy gluten-free quinoa dish, aka fake tuna noodle casserole.
Mix, in a glass bowl..cooked (leftover) quinoa, shredded mozzarella (I use low fat), and packet of tuna...amounts vary with how many servings you want. Nuke uncovered for 2-3 minutes or until cheese melts. Tastes like a tuna noodle casserole, it's healthier, and can't be quicker. This seems like a good thing to take to work and melt at the office, if I still had a "real" job. Side salad would go well.
