Hi,
Your best bet is to creat your Apple ID on the phone.  When I first got my 
phone almost three years ago I really didn't want to deal with iTunes and to 
this day I only use iTunes when I absolutely have to.  Creating your Apple 
ID on the phone is quite doable, but if you're new to IOS and VoiceOver, it 
still can be a hassle. It requires patience and time.  Be prepared to spend 
a lot of time dealing with the license agreement screens, and various forms 
for creating the ID, setting up security questions and the like. Or, if you 
want to, get some sighted assistance to make the process relatively quick 
and painless.  When it's all said and done, do yourself a huge favor and 
WRITE DOWN THE APPLE ID AND PASSWORD and keep it in a safe place where you 
can get to it quickly and easily.  I can't tell you how many students of 
mine didn't do this, and it's a major pain in the butt when they've 
forgotten passwords and such.
