There's no way to change it.  If it thinks you have stopped talking, it
stops listening and starts trying to "think."  Apple recommends just using
Siri to begin an email or text and then changing to "dictation" when you are
in the edit field.  Dictation is located in the bottom left corner of the
screen (next to the "more" button).  I have actually had better luck with
dictation programs such as dragon dictation, since they don't stop listening
until you double tap to make them stop listening.  Once you have finished
your message, though, you still have to get your text into an email message
(either through your desired dictation program or by opening a new email
message), so you its not totally hands free.  Oh, and if there is some kind
of network delay, Siri will just sit there forever either listening or
trying to figure out what you just said.

Greetings, how is everyone doing? I have been using Siri for a couple of
weeks and I've noticed that it's a lot more accurate than DragonDictate.
Although, I've noticed that sometimes it will just stop there and when you
try to do one thing after another with Siri that's wanted it seems to get
stopped up. Also, sometimes when you try to get into it it won't let you
talk. Is there a way of changing the limit and extending the talk time with
Siri? As an aside, I have been really impressed but I'm just a little
annoyed with a few of its little floss.
