Hi All~~
I'm trying to come up with a GF sourdough bread recipe using my standard
bread recipe. I can make a sourdough starter, but I can't find information
online that tells me what the starter replaces in the recipe. If I use 1 c.
of starter, do I simply add it to my bread ingredients? I don't think
so...but maybe - I wouldn't need help if I knew for sure.
I don't want to make someone else's sourdough bread - I need to know how to
come up with my own recipe. Currently, I use 3 1/3 c. GF flour (equal parts
rice flour, tapioca flour, arrowroot flour to which 2 tsp sugar is added),
1 egg and 2 whites, 1 1/4 c. warm milk to which 1/2 T. sugar and 1 1/2
pkgs. yeast has been added, 1 tsp. cider vinegar, 1/4 c. oil, 1 tsp. salt,
1 tsp. egg replacer (optional) 3 1/2 tsp xanthan. Eventually, I want to
substitute some of my existing flours with buckwheat or teff, but starting
with my current flours is my goal for now.
Can anyone help? I will be very grateful!!
