Lunchbox recipes and ideas wanted!

The National Foundation for Celiac Awareness (NFCA) is collecting
gluten-free lunchbox recipes to create a free downloadable eCookbook
for parents. We're looking for simple recipes - in fact, the simpler,
the better!
