If you go into Settings, then General, then Accessibility and then
VoiceOver you will find an area where you can practice using VoiceOver
gestures. You can tap, flick and swipe with one, two, three or even four
fingers and VoiceOver will tell you what the gesture normally does
without actually performing the function. It's very similar to keyboard
help found in screen readers or digital book players.
However, if you want to practice your gestures without burrowing deep
into the Settings menu there's a quicker way to do it. Just do a
four-finger double-tap anywhere on the screen. Once you do this,
VoiceOver help mode will start. To get out of this mode, you can do
another four-finger double-tap, do a two-finger scrub or press the home
button.
