If you are an iPad and iPhone user and use the built in VoiceOver screen
reader application, I am wondering about the specific process of how you
use VoiceOver feature to navigate through an application?

Do you tab between screen elements like on a desktop computer using the
gesture that simulates a TAB key on the Apple device or do you scan your
fingers over the tocuhscreen starting in the up left hand corner of the
display and then go from left to right and top to bottom, for example,
till you encounter the next screen element that is to be read out loud.

As these devices don't have physical keyboards, only virtual one that
appear when the focus is in specific fields, is using the TAB key to
navigate even an option on these devices?
