Thanks to everyone for their recommendations!

The Gluten Free Travel Site has a restaurant search: http://glutenfreetravelsite.com/maps/map-locator.php and another search site given was this one: http://www.lasvegasadvisor.com/dining.cfm?showAll=1

In-and-out burger serves nothing breaded, so fryers are only for fries. They also give the "protein option" for their burgers - lettuce wrapped instead of buns. (www.in-n-out.com) Many other chains are there, inlcuding PF Changs and other Lettuce Entertain You restaurants. I know here in Chicago they have dedicated gluten free menus. 

Mon Ami Gabi at Paris Las Vegas has a gluten free menu.

Joe's Steak and Stone Crab at Caesars Palace has a GF menu but can be kind of pricey.

Border Grille at Mandalay Bay also has a GF Lunch and Dinner menu. 

The Wynn hotel buffet has items marked Gluten Free. 

The following Las Vegas restaurants carry our Le Veneziane imported GF pasta: Canaletto @ The Venetian Resort-Hotel-Casino
and Il Fornaio @ New York-New York Hotel and Casino
