Hi everyone,

Sorry for this late summary.

These are the suggestions I received:

1) Generally, where to find GF dining options: The GlutenFreeTravelSite ( http://www.glutenfreetravelsite.com ), which is a website containing thousands of user-submitted GF dining and travel reviews from around the world, searchable by location. Simply visit the Search/Mapping page ( http://glutenfreetravelsite.com/maps/map-locator.php ) and enter a town/city into the Search Box. You'll get a list of restaurants that have been reviewed. Click on any restaurant to see it highlighted on the map and to link to the user-submitted review. 

2) For Houston: Ruggles GREEN (excellent GF menu, several locations incl City Centre, The Heights,  Sugar Land and on W. Alabama)

Grub Burger Bar (City Centre - also in College Station)
Pei Wei
Taste of Texas (steaks) you'll have to speak to a manager
Gluten Free Nation (GF Bakery on Wirt @ I-10)
H-E-B (for groceries)

Two excellent places I found while being on the road:

1) The Mason Dixon Bakery in Huntsville, AL. It’s Alabama’s first dedicated gluten-free bakery. They have delicious baked products for everyone, even for people who have more than one food intolerance. They also have quite a few paleo-friendly products. FYI, you can order all of their products on their website. 

2) Urban PL8 is a paleo restaurant in Atlanta, GA. This restaurant has delicious gluten-free food and margaritas.
