I will be visiting Knoxville soon.  I never want to be glutened, but I'm especially wanting to be sure to be in top form physically and mentally on this trip.  Does anyone have a recommendation for a place that they feel extremely confident about getting a safe gluten free meal in Knoxville?  I'll be staying in North Knoxville but doing some things close to the UT campus as well.

If no suggestions, I do have the option of cooking for myself, but friends wanted to go out.  They are letting me pick the location.
