Hi, I have a recipe for lemon squares and really would like to adapt it to be gluten free.  I am pasting a copy of the recipe on this e-mail.  My big concern is the crust.  I believe I tried it using gf flour once but it was soggy.  The filling calls for 4 tbls. flour but figured I could substitute corn flour.  Any suggestions.  

Lemon Squares
 
 
Crust
 
1 cupbutter
½ cupconfectionary sugar
2 cupsflour
 
Mixingredients and press into 9-13 inch greased pan.  Bake at 350 degrees for 15-20 minutes until a delicate brown.
 
Filling
 
4 largeeggs
2 cupssugar
4 teaspoonspeel
juice of twolemons, about 6 tbls.
4 tlb.Flour
1 teaspoonbaking powder
 
Bake at 350degrees for 25 minutes.
 
When coolslice and sprinkle with confectionary sugar.
