Part (all?) of the reason Cordain wants fat to be limited is he is 
assuming that his readers will be buying grain-fed meat. I don't 
believe he limits it when grass-fed.

One of the problems with chickens is they are always grain-fed. And 
the only way to get non-grain-fed pork is to mail order feral pork, 
also called wild boar or wild pig. I list a few vendors on PaleoFoodMall.com.
