Thank you for the note. Currently this Caveman Mix is treated with a 
2% solution of soybean extract, salt, vinegar, and sugar. The wash is 
done after the drying initial drying process and before the final 
drying. This process makes for minimal absorbtion but is what allows 
the jerky to be dry on the outside with some tenderness on the 
inside. We have a new product coming out next month that contains no 
soy or soy derrivatives and will be considered 100% Gluten Free. This 
is a mix with Steak Nuggets. We will also then be changing the 
formulation of the beef jerky to the same, making the Caveman Mix 
also 100% Gluten Free.

Again, the 2% solution is possibly considered Celiac Friendly, but 
not completely Gluten Free...yet.
