To OCR a PDF with Open Book, you need to use the Freedom Import Printer.

Open your document in Adobe Reader.

In Adobe Reader, press ctrl+P as if you were going to print the document.

Tab to the combo box that lists your printers.

Down-arrow to Freedom Import Printer and press enter. In some programs, 
arrowing up or down doesn't seem to work in this combo box. If this is 
the case, type F repeatedly until you get to Freedom Import Printer.

At this point, Open Book launches, if it isn't open already, and it 
scans the document. The process takes a little longer than you would 
expect, but it shouldn't take too terrible long.
