Hello List Mates,
Last year my Celiac daughter gave birth to a miracle baby. Shane is now a year old (genetic testing proved positive for the genes for Celiac) When it was time for Shane to have his first solid food the pediatrician told Amy to give him oatmeal instead of rice cereal. He cited several reasons including the arsenic concerns, lower glycemic levels and possibly higher protein. Amy and I fine-tuned the recipe using our Gluten-Free Prairie Toasted Oat Flour and Shane loved it. You can see the recipe here:
