I was in a health food store the other day and saw for the first time Udi's everything bagels in the frozen food case. Everything bagels have always been my favorite bagel so I thought my gluten intolerant 15yo son might enjoy them. Wow. He LOVES them. I just made him a turkey sandwich after toasting the bagel. My question is this: How would this hold up to being made early in the morning for a school lunch six hours later? Do any of you make a bagel sandwich as a "keeper" for a sack lunch? Bagels can be kind of funny in that they are best eaten warm whether they are GF or not. He does have access to a microwave at school, so that's a possibility but often nuked bagels get rubbery. I just wanted to survey what others had done along these lines....
