Thanks to all who responded with suggestions. Here they are:
Flaxseed meal
Tapioca
Pea Protein
Arrowroot
commercial xanthan gum thickener
Wear a N95 mask
Pure Argo cornstarch
Until I've experimented with ratios and taste of the natural products, I'm having my husband' morning aide mix up a shake jar of thickened water for me to use later in the day, while I wear a mask if nearby. I also ordered, for emergency use, some commercial xanthan gum thickener from a company that DOESN'T consider its cornstarch/maltodextrin thickener to be gluten free because of potential contamination, but does consider its xanthan gum thickener to be gluten free.
*Please provide references to back up claims of a product being GF or not GF*
