Dear Listmates,
If you like the idea of an easy-to-make ancient grain bread with no added starch then you may be interested in my latest test of Jovial gluten-free flour. This bread uses a commercial mix. I've tried to "reverse engineer" it, and so far I'm not successful. I'm sold on the nice whole-grain flavor of the bread, and although I have no problem with the traditional starches, this mostly-whole-grain bread offers delicious flavors and excellent loft. Another plus for no-added-starch bread is how easy it is for clean up. The bread dough is not sticky and seems less messy. However, don't try to over-fill your baking pan. Like most gluten-free bread the dough lacks the strength to climb above the pan rim. (Don't ask how I know!)
