So many other variable also. What are the nitrates eaten/cooked with? It could be that nitrate AND sugar cured bacon is different. Also, at that same time period what was the general increase in sugar and flour products?  What is ratio of cured meat vs. fresh?
I have no concern with the amount of sugar free bacon I eat,

Correlation doesn't equal causation.  I'm not sure whether I'm worried about nitrates/nitrites.
