Summary for St. Thomas:
My family did not venture outside of the resort, as it was challenging traveling with three children on St. Thomas. We stayed at the St. Thomas Ritz Carlton, which had a lot of beach amenities, and the hotel was very good at accommodating my diet. One of the chef's children has celiac, and for a day trip on the Lady Lindsey (snorkeling tour), he packed fresh shrimp, salad, and a GF sandwich for me.
The ocean and the beaches are beautiful (also traveled to St. John for a day trip), and we decided next time it would be better to rent a place for the week and prepare our own meals. Food on the islands is fairly expensive (probably about 3x the cost as in the States), and I packed cans of tuna fish, nuts, beef jerky, and instant oatmeal for the times when I couldn't get food (such as from food stand at Trunk Bay National Park).

It is easy to eat GF in the Caribbean. Traditional West Indian cuisine is GF. You just have to be sure they don't add some pasta on the side, but few do, as pasta is not West Indian. 2. One person told me to check out www.TripAdvisor.com for Delis or food markets. Her family ate at the Cooper Island Beach Club in St. John, and had a great salad with chicken.
If you go to St. Thomas/St. John. you will not be disappointed, but it would be safer to prepare your own food. Even with the hotel, I experienced inconsistencies with what staff said was safe for me to eat. One person told me I could eat something, and when I double-checked, it turned out the dessert was not GF. Next time, I will definitely travel with "dining cards" that clarify celiac and GF.
