Cider-Bacon Vinaigrette
2 cups apple cider
8 oz. bacon, diced
vegetable oil, as needed
2 Tbsp cider vinegar
1/4 tsp freshly ground black pepper
Reduce the cider: Ina heavy-based pan over medium heat, bring the cider to a boil, lower heat andreduce until it is very thick (about 1/4 cup). Watch very closely so it doesn’t burn.
Sauté the bacon until it’s crisp and fat is rendered. Remove bacon and pour bacon grease into ameasuring cup; add enough vegetable oil to bring level to 1/3+ cup. Combine the reduced cider syrup, the cidervinegar, and pepper in a small bowl. Whisk in the warm bacon fat and oil a few drops at a time. When ready to serve warm the vinaigrette.
Toss with baby spinach and sprinkle bacon over top.
