I received many responses to my post on whether some of
us may be dropping too many foods from our diet unnecessarily.
To my surprise, the vast majority were in favor of the perspective
I was offering, though some were not. In summary:
The key is not to fight life.
So much of what keeps us alive - breathing, blood circulation, ... -
happens with out any conscious effort; life is meant to be easy,
by nature.
Some years ago, some scientists published their results on
a 10 year study of longevity. They researched many people
around the world that were 90+ years old. They looked for
common factors - genetics, life style, food, ... The only thing
these people had in common: They were able to face great
adversity and let it go, move past it. They did not fight with
life. They did not over analyze it, argue with it or try to
explain it ... they just lived it.
There is a multitude of strange diseases even ones that
make people sensitive/allergic to everything, including themselves.
I realize that and accept it, but it must be noted that such cases
are extremely rare. The norm, by nature, is that the majority
of us, including the majority of celiacs, are quite compatible
with life, and we should just go on and live it.
