I received several replies to my message concerning one poster's bad experience with Cavanagh Polish Sausage and her claim that the South doesn't have health codes for restaurants or food standards like those in the North.

Everybody who wrote back who had tried Cavanagh said they had no trouble with them. And everybody agreed that the South does indeed have restaurant health codes and that federal food standards apply in the South as well as the North. 

One person did remind me that the vast majority of sausages in Canada are NOT gluten free. The ones that are GF are so marked.
